If you are running eCS, check out the Appearance object.

You can also drag a color and ctrl-drop it on some shadow text. Do this
with a test shadow. When you have decided on a color you like,
ctrl-alt-drop the color to make the change system wide.

Search the online help for "Selecting colors" for the various key/mouse
combos.
