Looking for examples or references to information on email header structures. I
wish to learn how to go about extracting/parsing the information from the
various email header fields.
Any information on the above subject would be much appreciated......thanks! :-)

Take a look at RFC 822 which specifies the message format and RFC 821

RFC 822 and 821 are a bit old, though. Check
http://www.rfc-editor.org/ for more recent documents. Some details
may have changed.
MIME (i.e. the email format) for example is defined in RFC
2045..2049.
